Ingredients:
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots, snap peas)
- 1 cup tofu or chicken, cubed
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 tsp minced ginger
- 2 cloves garlic, minced
- Cooked rice or noodles
Instructions:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add tofu or chicken and stir-fry until cooked through. Remove from the pan and set aside.
- In the same pan, add minced ginger and garlic. Stir-fry for a minute.
- Add the mixed vegetables and stir-fry for 3-5 minutes until they’re tender-crisp.
- Return the cooked tofu or chicken to the pan, add soy sauce, and stir-fry for another 2 minutes.
- Serve the vegetable stir-fry over cooked rice or noodles.
