{"id":9605,"date":"2021-04-06T02:00:08","date_gmt":"2021-04-06T02:00:08","guid":{"rendered":"https:\/\/yourlifeassist.co.za\/sunint\/1041-perfect-pea-soup1b83-3\/"},"modified":"2021-04-07T07:46:30","modified_gmt":"2021-04-07T07:46:30","slug":"1041-perfect-pea-soup1b83-3","status":"publish","type":"post","link":"https:\/\/yourlifeassist.co.za\/sunint\/1041-perfect-pea-soup1b83-3\/","title":{"rendered":"Perfect pea soup"},"content":{"rendered":"<div id=\"all\">\n<div id=\"main\">\n<div class=\"item-page\">\n<p>Serves 4 (250 ml each)<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>5ml oil, olive or canola (1t)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1 large onion, peeled and chopped<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>200g\u00a0 baby gem squash (1 punnet)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1 large potato, peeled and cubed<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>10 ml\u00a0chicken stock powder (2t) dissolved in<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>375ml boiling water (1\u00bd cup)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>250ml green peas, fresh, frozen or canned, drained (1 cup)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1 tin low fat evaporated milk (380g)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>Pinch of nutmeg<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>Black pepper to taste<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>15ml fresh parsley, chopped (1T)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>Optional: 4 rashers back bacon, lower fat, lower sodium, fat removed, chopped<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li style=\"list-style-type: none;\">\n<ol>\n<li>Heat the oil in a saucepan and fry the onion until transparent.<\/li>\n<li>Add the bacon and stir-fry for another 2 minutes.<\/li>\n<li>Cube the gem squash. Add the potato and prepared chicken stock.<\/li>\n<li>Cover and cook on low for 20 &#8211; 30 minutes, or until soft.<\/li>\n<li>Add the peas, cover and cook until the peas are heated through.<\/li>\n<li>Liquidise all the ingredients and return to the saucepan.<\/li>\n<li>Add the milk, nutmeg, black pepper and parsley.
